Easy summer meals
Light, fresh, vegan, and requires minimal cooking for easy summer fare, yet still focused on whole foods.
Thai Peanut Power Bowl
2/3 cup organic quinoa
1 tsp sea salt
1 1/3 cup water to cook quinoa
3 cups napa cabbage, shredded
1 cup carrots, shredded
1/2 cup fresh cilantro, rough chopped
1 cup mukimame (shelled edamame)
1 cup fresh pineapple, cut into 1/2" pieces
1/3 cup or more chopped peanuts
4 fl oz Thai Peanut Sauce
In a small saucepan, cook quinoa with salt and water.
Build your bowl with all ingredients and a generous topping of Thai Peanut Sauce.
