Dayton's Carillon Brewing Co. brings new taste to their old style of brewing beer.
Carillon Brewing Co. in Dayton's Carillon Historical Park has been throwing back the brewing process to the 1850s for several years. They replicate the way beer was made more than 160 years ago when Dayton saw its first pre-prohibition breweries start their operation. This modern throwback has made some changes to their fermentation process that make beer taste like a modern brew, despite being created with copper kettles and white oak barrels. Not only that, they have a wide selection of menu items that pair well with seven different styles of beer. The restaurant is open from 11 a.m through 9 p.m. Sunday through Thursday. On Friday and Saturday, they're open from 9:30 a.m. through 10 p.m.
